Why he’s Food 50: The veteran Miami chef is leading South Miami-Dade agritourism with his farm-to-table cooking.

After leading the kitchens of his own North One 10 as well as The Forge, chef Dewey Losasso decamped last year to the rural reaches of Homestead to take on an ambitious culinary project. He joined his friend Peter Schnebly of Schnebly Winery and Miami Brewing Co. to create an on-site restaurant, RedLander. There, he hosts special dining events and prepares daily menus for the winery and brewery tasting rooms.

Losasso is passionate about taking full advantage of the produce that surrounds him, creating dishes with pomelo, tomatoes, guava, mushrooms, greens, sour oranges, avocados and coconuts sourced within miles of or directly from Schnebly’s property. For Valentine’s Day, he made herb-seared Florida grouper with local fruit compote; on Super Bowl Sunday, it was boiled peanuts, lamb chili and guava-glazed barbecue ribs.
