This popular Miami taco spot gets a big glow-up at its new Bayside restaurant
In keeping with its cool Miami roots, Coyo Taco has upgraded its look.
The popular taco spot, which celebrated its 10th anniversary last year, has opened a new location at Bayside Marketplace, and with it comes a whole new design for the brand.
Designed by Saladino Design Studios, the new Coyo Taco features a more dramatic atmosphere, with neon and metal-wrapped columns — and the menu that has made the spot popular for more than a decade.
Sven Vogtland, who along with Alan Drummond and chef Scott Linquist founded Coyo in 2015 in Wynwood, said the brand is excited about what he calls a “new era.”
“This location reflects the evolution of Coyo Taco through a more elevated design and overall guest experience,” he said.
The new Coyo is 4,473 square feet, with four large garage doors that open to an indoor-outdoor bar and courtyard. The space seats 85 diners inside and almost 40 outside and still includes a communal table.
The menu will include dishes popular at other Coyo Taco restaurants — you’ll find them in Brickell, Coral Gables, Fort Lauderdale and South Miami as well as Wynwood — with a couple of new items. Linquist has created two only-in-Bayside dishes: Michoacan style carnitas, with pork, serrano salsa, onions, and cilantro, and the Miami Quesadilla Cubana with pulled pork carnitas, ham, queso mixto, pickles and mustard.
The latter, with its uniquely Miami makeup, will almost certainly be popular with tourists — which is of course the point, as a presence in Bayside expands the brand’s reach, Vogtland said.
“Bayside lets us connect with a much larger audience including thousands of visitors who can help carry the Coyo name around the world,” Vogtland said.
This is a timely development: Coyo has outposts in Santa Domingo, Lisbon, Portugal and Medellin, and it will also be opening a London location this summer.
