Roaches, no sanitizer, plenty of filth among a Miami restaurant’s 38 violations
More roaches than sanitizer and more “soiled” surfaces sanitized ones shut down a West Miami-Dade restaurant after an inspection last week.
While the roach count at Mr. and Mrs. Bun, 15572 SW 72nd St., wasn’t overwhelming, any number of roaches exceeded the amount sanitizer — none — during the inspection.
Let’s start with that in a listing of lowlights from April 28’s routine inspection that found 38 total violations including six high priority ones
The inspector “observed food contact surfaces were not properly sanitized.” That’s because there was “no sanitizer available of any kind. Only use single-service items to serve food to customers until sanitizer is available for warewashing.”
That takes care of one of a three-compartment sink’s trio of duties — wash, rinse, sanitize. “No soap at the three-compartment sink” leaves only rinse among the sink’s capabilities. The sink also was described as “soiled with grease.”
Another place sans soap: the dry storage area handwashing sink. That sink and the one next to the oven also lacked paper towels.
Under the oven lay four roach corpses and crawled nine live roaches. Two live roaches sashayed across the middle of the kitchen floor.
“Displayed food not properly protected from contamination.” Where? There was an “ice machine full of ice with no lid” at the front counter area.

Similarly, one reach-in cooler stored uncovered sweet potato fries and dumplings and another one contained uncovered boneless chicken wings.
“Food-contact surface soiled with food debris, mold-like substance or slime;.” Under that violation, the inspector listed kitchen “shelves for dry dishes and dry food racks;” the “interior of a reach-in cooler soiled with food residue;” the three-compartment sink’s spray hose; the dry storage area’s mixing machine and slicer machine were “heavily soiled.”
The food preparation sink “has soil/old food residue.” The handwashing sink next to the oven also was “soiled.”
The walls next to the three-compartment sink were “soiled with food residue and grease.”
“Grease on the ground and/or pad around grease receptacle” as in the “grease trap is on top of grass.”
The microwave oven was “soiled with accumulation of food debris and grease.”
One of the reach-in coolers had “shelves with mold-like substance.” Two reach-ins had “soiled” gaskets.
Also soiled were the door handles on a kitchen reach-in cooler, another cooler and a microwave.
Mr. and Mrs. Bun passed the callback inspection enough to reopen on Thursday.
