Roach poop and a chain’s second Miami food court inspection failure in 2 weeks
Flies and roach poop caused a mall food court chain’s Kendall location to fail inspection last week, a week after its Hialeah location also flopped inspection.
While all of Guaca-Mole’s Westland Mall problems flowed from a lack of potable water flowing, Guaca-Mole’s Dadeland Mall space had a few other problems beyond bugs and bug waste. The inspector found 15 violations, including three High Priority violations on Feb. 3.

The inspector saw “approximately 20 roach droppings on the wall behind a dry food storage rack.”
As for the flies, 10 were “landing on clean dishes at the dry rack station” and six were “landing on cutting boards used to prep food.” Seven buzzed the air above the three-compartment sink and three kept landing on a box of avocados next to the cookline.
The handwash sink next to the three-compartment sink didn’t have soap.
The handwash sink next to the front counter had soap but also food debris inside the sink, which a) says it’s being used for something besides handwashing and b) begs questioning how often it’s used for handwashing if the food debris doesn’t get washed away by water.
Cutting boards cuts were so deep, the boards weren’t cleanable anymore.

The inspector saw “several walls throughout the establishment were soiled” with accumulated grease, food debris and/or dust.
The kitchen ceiling tiles “were soiled with accumulated food debris, grease, dust, or a mold-like substance.”
