Swarming flies and other problems in a Soriano Brothers inspection failure

Too many flies and too much filth elsewhere caused a Soriano Brothers Cuban Cuisine restaurant to be closed by inspection last week.

Tuesday’s visit by the Florida Department of Business & Professional Regulation inspector to the Palmetto Bay Soriano Brothers, 18005 S. Dixie Hwy., for a routine inspection turned up four High Priority violations and 26 total violations.

Among the highlights of those citations:

At the front counter, a swarm of flies about 35 strong were “flying all around the front counter area and landing on the preparation table at front counter.” In the kitchen, a smaller team of more than five flies were “landing on top of the preparation table and cleaned equipment.”

The walk-in cooler contained “croquetas and lobster boxes not covered.”

The front counter’s cutting board was “grooved,” and no longer able to be properly cleaned.

A kitchen prep table can opener’s blade was a “food contact surface soiled with food debris, mold-like substance or slime” but got described only as “soiled” with no further details.

Tough washing hands at the front counter handwash sink that didn’t have soap. Staying with handwashing, an “employee engaged in food preparation while touching hair and not washing hands.”

Also, the inspector “observed several employees engaged in food preparation wearing watches and jewelry at the front counter.”

Someone else “engaged in food preparation with no beard guard,” which he put on during the inspection.

“Equipment and utensils were not properly air-dried — observed wet nesting inside clean utensils on a shelf at the kitchen area.”

Water leaking from the dishwasher in the kitchen became standing water in the dishwashing area.

There was also a “reuse of single-service or single-use articles” as in an “empty tomato can was used to dispense rice inside rice container at the kitchen area.”
