Flies inside cheese and other bad places at a Miami restaurant, inspection says

Flies not just on food but inside food were among the reasons a West Miami-Dade restaurant was shut down by state inspectors last week.

A customer complaint brought inspectors to Quesillos Guiliguiste, 11323 W. Flagler St., on Tuesday, and they found 17 violations, seven of which were High Priority.

Quesillos reopened after passing re-inspection on Wednesday. But here’s some of the violations that put the place in restaurant timeout.

The inspector counted 20 flies “standing on ripped plantains on storage shelves;” seven flies “standing on personal tableware on storage shelves;” and two flies “inside braided cheese in the kitchen.” That got Stop Sales on the braided cheese and the plantains.

The apparently ineffective bug zapper was placed right over cooking spices on storage shelves.

Even with all those flies, “cacao beans stored inside a plastic container” sat uncovered on storage area shelves. Not only that, the beans were inside a non-food grade bag. Inspectors found the same problem with chicharron in a chest freezer.

Also getting a Stop Sale was the white rice, which had been in a cooler for more than four hours, but still measured 73 degrees. It needed to be at or under 41 degrees.

Frozen raw pork was thawing on a kitchen sink drain board instead of under refrigeration. That’s an engraved invitation to foodborne illness bacteria growth.

The employee restroom didn’t have a covered trash can.
