Miami’s obsession with barbecue has led to this all-out Coral Gables event
Vegans, look away.
Nearly two dozen Miami-area chefs with a talent for cooking meats over an open fire are hosting a bacchanal of grilling, barbecue and smoking at Cochon555’s Heritage Fuego, a sister event to the annual Cochon national cooking competition. Chefs with expertise in everything from Texas barbecue to Filipino cuisine will be cooking with live fire outdoors at the Biltmore Hotel on Nov. 21.
“From parrilladas to Caja chinas, this event will highlight locally sourced and sustainable Heritage Breed proteins but with Miami flair,” Brett Friedman, Partner & CEO of Agency 21, which owns and operates Heritage Fire and Cochon555 wrote in a release.
The original Cochon is all about coming up with interpretations of cooking pork raised for their particular flavor. Fuego expands on that, challenging chefs to make mouthwatering dishes from dry-aged beef, lamb, goat, squab, rabbit — even oysters.
And for the stray vegetarians or curious vegans in the crowd, the chefs will also show their skills with heirloom vegetables.
And the chefs are as much a draw as their dishes. They included fine-dining chefs like James Beard award nominees like Brad Kilgore and Giorgio Rapicavoli, past Cochon winner Jorgie Ramos of Coral Gables’ Cebada rooftop restaurant, Coyo Taco co-founder Scott Linquist, Phuc Yea’s Cesar Zapata and cookie dessert wiz Andrew Gonzalez of Night Owl Cookies.
All the food and cocktails, wines and desserts are included in the tickets, which range from $99 to $150 for early access.
