Slurp alert, ramen lovers: This Miami neighborhood is getting a new noodle bar
Attention, ramen lovers. It’s almost time to start your slurping.
Hachidori Ramen Bar is coming to Miami’s Little River neighborhood this fall, bringing with it a passion for Japanese soul food and tradition.
Husband-and-wife co-owners Guillermo Paniza and Jessica Daez say they fell in love with ramen on their honeymoon in Japan.
“We spent a month traveling to seven different cities, learning about the culture, and immersing ourselves in the cuisine,” says Paniza, who is also the restaurant’s general manager, in a press release.. “When we came back to Miami, we felt we could provide something of value to the community by introducing this concept.”
Homemade broths are simmered slowly in the open kitchen, the owners promise. Highlights include The OG Ramen, a 20-hour Tonkotsu broth with two-day cured, four-hour braised pork belly, spices, miso tare and marinated soft-boiled egg, and Shoyu the Money, with a chicken-and-soy-sauce base with dashi and bonito flakes.
Vegans and vegetarians can enjoy Hachidori’s menu as well by ordering The Shrooms, which is made with a mushroom and onion stock that simmers for six hours.
You can also expect izakaya-style favorites to share, like gyozas and bao buns, Japanese street corn, umami sticky bread and crispy yakiniku ribs. The restaurant will also sell beer, wine and sake and plans to open Oct. 22 at 50 percent indoor capacity at first, with outdoor dining on its patio.
