This new pizza shop in Wynwood will serve your slice cut to order with scissors

Nope, not a condo. Not a CBD coffee and tattoo shop.

Another pizza place!

But Bonci Pizza is no ordinary slicery. Hailing from Rome, the al-taglio (rectangular) style pizzeria is the product of Gabriele Bonci, dubbed by Vogue Italia as the Michelangelo of Pizza.

After opening Pizzarium Bonci in Rome back in 2003, the eponymous pizza master made a name for himself with his three-ingredient dough, three-ingredient pizzas and a pair of scissors he used to precision cut each slice. Bonci insists on allowing the dough to rise for 72 hours before dressing it up with fancy ingredients. Among the signatures: Meatball Sopressata, Zucchini Ricotta Lemon Black Pepper and Potato Mozzarella pizzas.

Besides the pies, food fans will fawn over Rome’s street foods and salads, only these are created just for Miami. Chef Bonci has taken on the Cubano, transforming his proprietary secret dough into a sandwich bun that will hug Little Havana’s fave sandwich ingredients.

“We are excited to continue expanding and make Miami Bonci’s new home in the U.S.,” said Chef/Owner Gabriele Bonci. “The city has a vibrant energy and exciting culinary scene, and we look forward to sharing our Roman-style pizza with visitors and guests alike.”
