Crust Pizza evolves into Crust Restaurant, opening this month in Miami

Veteran chef Klime Kovaceski chuckles when asked about the menu at his new Crust, set to open this month at 668 NW Fifth St. in Miami. 

“At first, it was going to be more like a typical pizza place,” he says Tuesday from the restaurant. “But it’s become something else. Something more. I couldn’t help myself.”

So what, then, to expect from Crust, a 50-seat, 2,400-square-foot former home by the Miami River that was originally projected to open in September

For starters, Kovaceski (formerly of Crystal Café and Trio on the Bay) and his wife, Anita Kovaceski, have two menus: 

1. A big, ambitious takeout and delivery menu centered around New York-style pizzas, stromboli and calzones, and encompassing everything from chicken wings, subs and burgers (pictured: mahi sliders) to the chef’s signature pan-fried shrimp cakes and New River baked ziti with chicken, broccoli and lemon-garlic sauce. Kovaceski says he anticipates doing about 30-40 percent of his business from this menu, delivering to about a five-mile radius around the restaurant.

2. A slightly more upscale, modern Mediterranean menu for dine-in guests, including housemade pasta and risotto, shareable apps like pistachio-crusted goat cheese with braised endives, and entrees composed of chicken, beef, pork, lamb, fish and vegetables.  

Kovaceski says he’s just putting finishing touches on menu, dining room and training, and he should have Crust’s doors open in “about two weeks.”
