Just announced as executive chef of Fooq’s, the soon-to-open farm-to-table spot in the former NeMesis Bistro space: Nicole Votano, former executive chef at Michelle Bernstein’s Design District spot Crumb on Parchment.
“I’ve been a fan of Nicole’s cooking for a long time and I’m very fortunate to have her by my side throughout this process,” says owner David Foulquier. “Our shared passion for food has allowed us to feed off of each other’s culinary inspirations, offering a canvas to lay out our ever-evolving ideas.”

Votano has held positions at Kimpton Group’s French brasserie Grand Café, Bradley Ogden’s restaurant One Market, The Four Seasons Hotel and the Biltmore Hotel’s Fontana Restaurant. As Bernstein’s executive catering chef, Votano played a key role in the Crumb pop-up dinners.
“I am so excited to be working with David to give Miami a restaurant where the food will be as warm and inviting as the environment,” says Votano. “I am working closely with local farmers to source fresh ingredients, and our seasonal menu reflects this commitment. Most importantly, our dishes are filled with lots of love, and I can’t wait to create new food memories for our guests.”
