Lutum, a restaurant named for the Latin word for dirt and soil, is opening on Tuesday, Aug. 8 at 1766 Bay Road in the Sunset Harbour neighborhood by El Grito partners Washington Charles and Antar Sosa.
Executive Chef Michael Mayta, who started as a prep cook at Michy’s and opened Cena by Michy as Chef de Cuisine, is in charge of the foodstuffs and has designed a menu that is centered around, what else, local and seasonal ingredients. “The inspiration behind the menu is simple: all things Miami – from local ingredients to dishes that are representative of the many cultures that live here – we’re paying homage to the city we all call home,” said Mayta.
The menu looks amaze. Here are a few highlights:
Falafel Scotch Egg harissa caponata: soft poached egg, encased in a layer of falafel mix, fried and served alongside a harissa caponata.
Burger LTO: two hard seared patties topped with warm cheddar sauce and served in between a brioche bun over lettuce, tomatoes and onions with fried.
Seafood Cavatelli with pei mussels, clams, prawns, rouille: a play on paella, house-made cavatelli seasoned with a hint of saffron topped with shrimp, shucked mussels and clams sautéed with garlic, zucchini and piquillo peppers.
