Cochon 555 brings heritage pork to Miami Feb 9
Cochon 555 makes its sixth visit to Miami Feb 9. Billed as the “nation’s premier culinary tour touting the flavor and benefits of eating heritage breed pigs,” Cochon 555 is a traveling exhibit featuring five chefs, give pigs and five wineries. This year’s chefs include Jose Mendin (Pubbelly Group), Conor Hanlon (The Dutch), Bradler Herron (Michael’s Genuine Food & Drink), Aaron Brooks (Edge) and Dena Marino (MC Kitchen).
The five chefs will each make up to six dishes each and compete to the the judge & crowd favorite. This year, in celebration of the tour’s 6th anniversary, chef Rick Mace (Cafe Boulud) will prepare a fifth late-night pig in an Asian speakeasy style.
Other event highlights include The Goose Nest, an area pairing Goose Island Beer with Hudson Valley foie gras; live butchering demos, a “Punch Kings” cocktail competition; welcome cocktails a tartare bar and desserts. $125 per person general admission, $200 VIP (includes easily admission and premium access to select experiences & items).
