Tudor House chef Jamie DeRosa opens Tongue & Cheek on Miami Beach

The goods: Chef Jamie DeRosa (Tudor House) and co-owner Michael Reginbogin (Estiatorio Milos) present Tongue & Cheek, a Miami Beach gastro-pub.

Ambience: The space has a warm speakeasy feel with mason-jar lanterns, wood-paneled columns, deep chocolate banquettes and a bar clad in white subway tile.

The grub: Modern American. The menu is divided into snacks, mids, mains and sides. Prices are reasonable: Snacks $5-$9, mids $9-$14 and mains $15-$30.

Begin with a plate of Gruyere mini-popovers, then move onto snacks like honey-topped chicken liver pate, a trio of white anchovies boquerones or salt cod brandade fritters. Mids include “Caesar” salad with kale and lemony dressing, silky cauliflower panna cotta with uni and American caviar and lettuce wraps with crispy pig ears, Florida oranges and salted peanuts.

Dig into mains like beef cheek burgers with Cheddar pimento cheese, fried chicken with Tabasco hollandaise or scallops with popcorn puree. Pair with poutine pastrami-spiced fries or Beijing string beans.

Verdict: A welcoming tavern serving eclectic eats from the former Tudor House chef.
