Two high-profile Miami Beach restaurants are going through kitchen-leadership changes:
Steven Rojas is out after less than a year as chef de cuisine at Michelle Bernstein’s Seagrape at the Thompson Hotel in Miami Beach.

And Thomas Griese is stepping away from his post as chef de cuisine at Michael Mina 74 in the Fontainebleau Miami Beach, effective the end of this month.
Seagrape executive sous chef Jason Schaan has stepped into Rojas’ role of kitchen manager; the change does not affect Bernstein’s association with the restaurant or hotel.
MM74 has not named a replacement for Griese, who will continue to work for Michael Mina’s restaurant group outside of South Florida. Cooks from MM74, StripSteak (Mina’s other restaurant in the Fontainebleau) and the resort’s culinary team will fill in until a chef de cuisine is selected.
Rojas, whose cooking earned a Michelin star in Los Angeles, and Griese are the latest big-name chefs to leave Miami kitchens.
Christoper Lee, also a Michelin star winner, left his executive-chef position at The Forge in Miami Beach this month.
Roel Alcudia last week parted ways with Michael Schwartz’s The Cypress Room, where he had been chef de cuisine since the restaurant opened in 2013.
Conor Hanlon recently left his job as chef de cuisine of Andrew Carmellini’s The Dutch, around the same time Julie Frans left her post as executive chef of Essensia at the Palms in Miami Beach.
