Chef Mathias Gervais, who won the Sept. 17 episode of the Food Network’s Chopped, is opening Jaya, a modern Asian-inspired restaurant, late November at The Setai. It will replace The Restaurant, the hotel’s signature dining space.
“One of my favorite things about being on Chopped was bringing this win home to Miami Beach,” says Gervais. “As we gear up for the launch, I am looking forward to hanging up my title in the Jaya kitchen.”

Jaya’s menu will feature “conscious Southeast-Asian cuisine,” says a rep. Gervais and executive sous chef Vijayudu Veena will be serving regionally specific sharing plates from Thailand, Vietnam, Korea, India, China and Japan including Peking duck, naan bread, Indian curries, sea bass and dumplings.
