Former Cypress Room sous chef Michael Beltran is opening a restaurant called Ariete at 3540 Main Hwy. in Coconut Grove.
Miami food-scenesters will note that’s a slight departure from Beltran’s original plan, which was to put Ariete in the heart of Little Havana, in the former Duke Bistro space on Calle Ocho.

“Our deal in Little Havana sadly went south at the 11th hour,” Beltran says. “I have a deep attachment to the neighborhood; my family has lived there for almost 45 years. That being said, we had to look elsewhere.”
That search led Beltran and his team to the Grove, where they will be setting up Ariete in what used to be Italian wine bar La Bottega Enoteca. (The restaurant shares an address with Calamari seafood bistro and is neighbors with Taurus Beer & Whiskey House.)
Beltran says he’s aiming to have Ariete open for dinner service in January, with lunch and brunch to follow about a month later. Ariete’s Coconut Grove space provides for indoor and outdoor dining, as well as a 50-person room for private events.
Although the location has changed, the concept has not. Ariete’s menu will be built around the restaurant’s wood grill and will feature options like smoked headcheese with house pickles, foie gras and plantains, oxtail and bone-marrow pie, and other go-big-or-go-home dishes.
