New restaurant and lounge Able & Baker is set to open in February at 920 Alton Rd. in Miami Beach, the former home of Chow Down Grill.
Able & Baker is a collaboration between Miami entrepreneur Tatanka Guerrero (Orange Blossom, Sweetwater Beer Garden, Radio Bar) and his business partner Luiz Fleury, along with New York-based chefs John McCarthy and Ryan Tate. McCarthy, an alumnus of wd~50, is chef-owner of The Crimson Sparrow in Hudson, N.Y. He recently partnered with Tate, formerly of Blenheim and Le Restaurant, to create SparrowFoods Co.

In Miami, McCarthy and Tate are working on dishes “inspired by traditional Japanese kaiseki tasting menus,” blending Japanese and local ingredients with Korean influences as well, according to press materials. Aesthetics of the 55-seat space will be a mix of rustic-industrial with tropical flourishes, like custom-made Jamaican wicker chairs.
“I am very excited about this project because I get to work with people that I look up to and respect,” Guerrero says to Miami.com. “I’ve been able to put the right team in place. This is something that I really believe in.”
A note on names: Able & Baker — a nod to the first monkeys to survive a U.S. space mission, in 1959 — is the latest in a string of new Miami restaurants to follow the Noun-ampersand-Noun naming convention. Others:
