Two Miami restaurants today announced the departure of their head chefs:
• David Blonsky is out as executive chef and partner of Apeiro, which has locations in Delray Beach and midtown Miami. Blonsky moved to South Florida in 2014 to open Apeiro in Palm Beach County with veteran restaurateur Burt Rapoport. The two expanded the concept with Apeiro’s Miami-Dade location this fall. Blonsky had previously been corporate chef of the Chicago-based hospitality group behind chef Fabio Viviani’s Siena Tavern, which had a short-lived stint in South Beach. A dispatch from Apeiro notes that chef de cuisine Anthony Sitek will oversee the food at both restaurants, and: “We wish David the best.” Look for a review of Apeiro in Saturday’s Miami Herald and online at Miami.com.

• Carla Pellegrino has decamped from Touché Rooftop Lounge and Restaurant, which the former Top Chef contestant helped open in spring 2014 at E11even in downtown Miami. “After two wonderful years in South Florida, I look forward to returning home to Las Vegas,” Pellegrino says in a statement, noting that the split appears amiable. “I’m proud of all we’ve accomplished, and I look forward to the partners’ continued success and collaborating with their future endeavors.” No word on who will assume kitchen leadership in Pellegrino’s wake. Touche earned a three-star Miami Herald review in August 2014.
