The story: As diplomatic relations are restored between the U.S. and Cuba, my Instagram feed is teeming with images of Havana. Renowned Miami bartender Julio Cabrera (aka “Papa Doble,” a nickname earned for his passion for historic Cuban recipes from the 1930s) travels there often to exchange knowledge with bartending legends at the famed El Floridita and Sloppy Joe’s Bar alongside the Asociacion de Cantineros de Cuba (A.C.C.)– a professional bartenders’ guild in Cuba for nearly 100 years. Every Wednesday night in South Beach, Cabrera recreates the allure of these classic venues at The Regent Cocktail Club in the form of rare-to-underappreciated drinks, music, and dance. Try the canchánchara: white rum or aguardiente with fresh lime, house-made ginger-honey syrup, served over crushed ice in a terracotta cup.
