The story: Celebrate Dolce Italian’s recent victory on the season finale of Bravo’s “Best New Restaurant,” a culinary competition series hosted by celebrity chef Tom Colicchio. The Spicy Raspberry Collins at Dolce is not really an Italian-style drink, per se, but we still think it’s a fitting choice for your next round. After all, it was created by legendary Cuban bartender Julio Cabrera who runs the bar program at the Gale. Expect a blend of vodka, fresh lime juice, and a fiery syrup starring sugar-water infused with spicy jalapeño, cayenne pepper, fresh ginger and paprika. Thankfully, the recipe calls for a thick and fresh raspberry puree to temper the heat. The ingredients are shaken and strained over ice before getting a dash of ginger beer in the classic Collins glass.
