The story: Head to the lobby of the historic Fontainebleau hotel during Social Hour for this specially-priced cocktail on tap at Michael Mina 74. The “In the Air Tonight,” named after the anthemic Miami Vice theme song by Phil Collins, features Bacardi 8 rum, house-made velvet falernum (rum-based liqueur with pure sugar cane, lime, almond, cloves and spices), pineapple-sage gomme (silkier and more complicated version of simple syrup), and fresh lime juice. The sweet and herbaceous ingredients are batched in a mini keg attached to the restaurant’s traditional draft system to speed up service for guests. It’s a tropical, tiki, Miami-style version of the classic refresher known as the Tom Collins, a gin-based drink. In addition to this and other discounted cocktails, MM74 is serving complimentary bites during its new daily Social Hour.
