The story: This exquisite dirty martini emerged when Michael Schwartz’s Cypress Room morphed into Cypress Tavern. It’s one of more than a dozen cocktails that came along with the new, more casual concept in the same Design District spot. The Dirty Pickle, a collabo between Eric Larkee and head bartender David Ferree, is made with cornichon brine and finished with smoked Maldon Salt from England. The choice of spirit—vodka or gin— is ultimately left up to the guest, but we prefer to take the classic gin route.
