The Pineapple: Absolut Elyx, Palo Cortado Sherry, salted caramel bitters, Bittermens Elemakule Tiki Bitters, housemade pineapple-rosemary syrup, over crushed ice in a copper pineapple-shaped vessel. Matador Room at The Miami Beach Edition, 2901 Collins Ave., Miami Beach.

Bari: Corzo blanco tequila, watermelon, jalapeno, basil, cilantro, agave syrup and fresh lime, over crushed ice. Scarpetta at Fontainebleau, 4441 Collins Ave., Miami Beach.  

Passion Fruit Cilantro Caipirinha: Cachaça (distilled sugar cane), muddled lime, fresh passion fruit puree, simple syrup and cilantro, over ice. Verde at Pérez Art Museum Miami (PAMM), 1103 Biscayne Blvd., Miami.

I Rock Ruff & Stuff: Afrohead dark rum, Ancho Reyes chile pepper liqueur, mole bitters, housemade cinnamon syrup and Mandarine Napoleon, over a rock. The Rum Line, 1601 Collins Ave., Miami Beach. 

The Aviator: Tanqueray No. Ten, Fever-Tree Tonic Water, Warre’s Colheita port, Bittercube Bitters Jamaican #2 and lemon, over ice in an Old Fashioned glass. The Broken Shaker at Freehand, 2727 Indian Creek Dr., Miami Beach.
