I wander through the massive cream-colored lobby, with a long vaulted archway that opens at both ends, allowing the breeze to move through. I lower myself onto one of Javier Uma's sculptural seating installations and feel my shoulders drop. The natural materials, textures and colours, aligned with the philosophy of sustainability, extend to the 123 suites. According to Assafi, "When you look at the rooms themselves, we have a very neutral colour, very elegant and elevated. The textures are 100% Mexican."

On our second day, we join the GM's Table, part cooking demo, part world-tour lunch, part behind-the-scenes peek at the people who run the place. Assafi introduces 13 staff members, from the financial controller to the executive chef and the pastry chef.

Antonio from Vancouver helps prepare the gazpacho. Steven from Texas mixes the ceviche sauce. Although I don't usually like gazpacho, the layering of flavors draws me in. The couscous with mushrooms tastes heavenly, a mix of sweetness from prunes and savoury truffle oil. The lemon chicken tagine is fragrant with turmeric and cumin. The dessert, buñuelos with mezcal pastry cream and caramelized walnuts, is the kind that makes you close your eyes.
