I really love croutons in my salads and Yumna’s clever take really takes a dinner staple to a whole new level. The firm texture of the feta means the cubes hold their shape in the air fryer.
Besides sprinkled over salad, Yumna loves to serve the crispy feta croutons other ways, too. She suggests, “they are delicious as a topping for tomato soup. Ingredients
- 1 (8 oz.) pkg. feta cheese, cut into cubes
- 1/4 cup all-purpose flour
- 1 large egg
- 2 Tbs. milk
- 3/4 cup Italian breadcrumbs
- 1 head romaine, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 red onion, sliced
- 2 Persian cucumbers, sliced
- Vinaigrette dressing (see below)
Instructions
Make croutons: Place feta cubes on paper towel; pat off any excess liquid. Add flour to small, shallow bowl. In another bowl, whisk together egg and milk until fully combined. Add breadcrumbs to third bowl.
Dip feta cube in flour, followed by egg mixture and then breadcrumbs. Dip feta back into egg and then back into breadcrumbs a second time. Transfer feta cube to a small plate or baking tray and repeat with remaining croutons.
Place feta cubes in the freezer to firm up (20–30 min.). Once feta croutons are cold to the touch, heat air fryer to 400°F. Transfer croutons to air fryer basket and cook until golden brown on edges, about 7–10 min. Set aside until ready to serve.
Assemble salad: Combine lettuce, tomatoes, red onion and cucumber in large serving bowl. Drizzle over dressing and toss to combine. Top with feta croutons and serve.
Vinaigrette: Whisk 2 Tbs. red wine vinegar, 1 Tbs. lemon juice, 2 tsp. Dijon mustard and 1⁄2 tsp. Italian seasoning. Slowly stream in 1⁄4 cup olive oil, whisking until blended
