Why they’re in the Food 50: London-born Danielle Kaufmann and husband Freddy, a culinary school graduate, couldn’t find a “proper” sausage being made in South Florida, so they set out to do it themselves. They did, and then they went on to open a humble gem of a butcher shop with quality and hospitality that’s unrivaled in South Florida. Proper Sausages offers encased meats in unique flavors (fig and blue cheese; Jamaican jerk; apple bourbon; porter beer) crafted from Berkshire pigs that are raised naturally and humanely. Chefs also have caught on to the quality and flavor of Proper Sausages. Coins of spicy pork sausage add kick and heft to gumbo at Mignonette, and earthy lamb sausage appears whole as an occasional appetizer special at Proof Pizza & Pasta. Proper also offers retail cuts of Florida Wagyu beef from Jackman Ranch near Clewiston, house-cured bacon, pasture-raised lamb and heritage-breed poultry (put “Order Thanksgiving turkey from Proper” on your 2015 to-do list). Housemade pâtés and pickles and mustards round out the shop, along with some local produce and artisan cheeses. “Society clamors for more source-verified meat from healthy animals as people have become more concerned where their food comes from,” Freddy Kaufmann said. “We are going back to the way it was 50 years ago, before the addition of hormones and antibiotics, with a product beyond reproach.”

Next-best meat? Kaufmann said he’s always impressed by the all-natural beef jerky being made by Novae Gourmet in Broward County; available at local farmers markets.
