Why she’s in the Food 50: Does Sasha Ullman follow greatness or does greatness follow Sasha Ullman? The young culinarian was a driving force behind Zak the Baker’s Wynwood café, putting salty sardines and sweet raisins atop crusty multigrain sourdough or pairing earthy beets and radishes with Jewish rye and a schmear of cream cheese. She left in the fall for Miami’s Next Great Thing: 27 Restaurant, which this month earned a 3.5-star Miami Herald review. There, Ullman is in charge of the daily specials: crudos and vegetable plates and the catch of the day. She cooks with bright flavors and contrasting textures, and, at the ripe age of 25, Ullman has more great things to come.
