INDULGE’s Daily Dish: It’s always a good day for pasta, especially if it comes from this Downtown Miami eatery
Monday. Tuesday… It’s always a great day for a steaming plate of pasta. Now that one of Downtown Miami’s favorite eateries is offering takeout, contactless pick-up and 3rd party delivery of their all day menu, there’s no reason to deny yourself one of their most delectable dishes. Fooq’s is excited to have just launched their new ‘Bazaar’ – an online store which includes take home pasta kits featuring their famous Bucatini Amatriciana, as well as ready-to-grill kebabs and spreads and dips like the popular house-made tahini hummus and babaganoush by the pint. Fooq’s Bucatini Amatriciana
Ingredients:
2 Yellow onion (diced medium-size)
2 cloves Peeled garlic (thinly sliced)
4 oz Tomato juice
10 oz Crushed tomato
2 Fresh tomato (cut into large, chunky pieces)
1 bunch Basil leaves
4 oz Parmesan cheese
4 oz Pecorino cheese
8 oz Unsalted butter
1 pack dry Buccatini rustichella pasta
8 oz Pancetta (optional for vegetarians) cut into 1/2 inch pieces
Red chilli flakes
Salt
Water
Olive oil
Preparation:
Sauce: Caramelize onion and garlic in olive oil on medium high heat 15-20 minutes. Add tomato and stir for about 5 minutes. Bring to a boil, stir and reduce heat to simmer. Cover with lid and cook in oven at 300 for 1-2 hours, stirring every half hour.
In a separate pan, render pork on medium heat until crispy. Stir in chili flakes to desired amount of spiciness. Pour tomato sauce in with the pork. Add cooked pasta with 2 oz of water used to cook the pasta. Add butter and cheese and continue stirring consistently. Adjust with salt and add basil. Serve on your favorite plate and enjoy!
