INDULGE’s Daily Dish: Start the week in a simple and healthy way with B Bistro + Bakery’s gazpacho
Begin the week by setting some ‘cool’ intentions in the kitchen. Gazpacho, a cold Iberian dish traditionally enjoyed during sweltering Spanish summers, works as an ideal lunch or dinner option in our own sultry Miami temperatures and requires little effort to make. Chef Henry Hane of B Bistro + Bakery in Brickell offers us a deliciously smooth version, made with basic ingredients most of us have in our refrigerators. An added bonus? Not only is gazpacho low in calories but it also has body-boosting benefits. The combination of tomatoes and red peppers is chock full of Vitamin C, giving your body extra immunity support and helping to strengthen your digestive system. Easy, tasty and beneficial to your well-being, this recipe is the definition of health #goals. There’s nothing cooler than that.
Chef Henry Hane’s Gazpacho
(This recipe yields approximately 1.5 quarts)
Ingredients:
4 cups of chopped tomatoes
1 cup of chopped onions
2 cups of chopped cucumbers (skin off and seeds discarded)
2 cups of chopped red peppers
2 garlic cloves
1 cup of sherry vinegar
1 cup of live oil
1 cup of old bread
2 tbsp. of salt
Directions:
Mix all ingredients and let them marinate in the refrigerator overnight. On the following day, blend all ingredients in blender for at least 2 mins until you achieve a smooth emulsified soup. Strain through fine mesh strainer. Set in refrigerator for at least 2 hrs. Best enjoyed very cold! Top with some crunchy breadcrumbs and your favorite olive oil.
