Ah, Sunday. Synonymous with late mornings that lead to hazily catching up with friends over bottomless mimosas outdoors, the last day of the week can be just as pleasant at home — if the menu is on point. Luckily, you can now bring your favorite Sunday dishes to your table by supporting local restaurants that are offering brunch menus for takeout and curbside pickup. Coral Gables spot Fiola Miami has launched their own weekend brunch selections featuring some of the restaurant’s most popular dishes, including their extra-large lemon ricotta pancakes. While you can always opt to make the zesty-yet-sweet dish in your kitchen (recipe below), a quick call to Fiola will require a lot less effort, in keeping with those traditionally laid-back Sunday vibes.

Lemon Ricotta Pancakes

Serves 4 (depending on size of pancake)

Ingredients:

1 cup All Purpose Flour

1/8 tsp Kosher salt

¼ cup granulated sugar

2 tsp baking powder

1 cup Whole Milk Ricotta

4 eggs, separated

1/3 cupswhole milk

1/4 tsp lemon zest

1/4 tsp orange zest

1 tsp fresh lemon juice

Scraped seeds of ¼ vanilla bean

1 TB melted butter

Butter for cooking

Preparation:

Combine the flour, salt, sugar, and baking powder in a large bowl. Set aside. In a separate bowl, stir together the ricotta, egg yolks, milk, citrus zest and lemon juice, and vanilla bean. Finally, in a third bowl, or in a stand mixer, whip the egg whites to soft peak. Combine the dry ingredients with the ricotta mixture. Drizzle in the melted butter. Fold in the whipped egg whites. Heat a griddle over medium-high heat. Melt a small bit of butter in the pan, just enough to coat the surface. Use a ½ cup measure to pour batter onto the hot griddle. Cook the pancakes for about 3 or 4 minutes, until the undersides are golden and you see a few bubbles popping through the pancakes. Flip the pancakes and cook another 2 to 3 minutes, until golden. Repeat with the remaining pancakes.
