Why she’s Food 50: We always have room for her playful and balanced desserts, no matter how stuffed we are from dinner.

Since stepping into Eating House’s kitchen as pastry chef almost a year ago, Cielle Bragin immediately found her sweet spot in composing complementary finishes to chef-owner Giorgio Rapicavoli’s savory dishes. Her always-changing desserts play with different textures and contrasts of sweet, salty and sour to excite the palate. Recent standouts: Banana cake with peanut ice cream, Thai coffee reduction and tamarind curd, and carrot cake with pineapple and coconut and cream cheese ice cream (!!) that may be the best deconstructed anything we’ve tasted.

Even as Rapicavoli (a 2015 Miami Herald Food 50 winner) has lightened up his menu to include more plant-based dishes and vegetarian options, it’s hard not to eat yourself silly at Eating House. The fact that diners always find room for Bragin’s pitch-perfect desserts is a testament to her talents.
