Why he’s in the Food 50: Zak Stern spent five years on a working agricultural journey through Israel, South America and Europe to bring South Florida his unique brand of hard-crusted, sourdough breads. He’s steadily expanded without sacrificing quality, supplying to restaurants, farmers markets and specialty shops throughout South Florida. His Zak the Baker shop in Wynwood continues to crank out one loaf at a time, with the kind of communal feel reminiscent of a kibbutz. “I believe that the more connected we are with the process of our food, the more joy we will derive from it,” Stern said. “I have an open kitchen so people can come see the beauty of the process of bread baking.”
Stern says: “Until our farmers markets have more farmers than vendors, I think we still have a long way to go. I’m not nearly as impressed by a well-marketed fast-casual food concept or celebrity chef as I am by a local farmer.”
