On a cross-country trip from Florida to California in the early 1970s, Coconut Grove resident and sandal maker Michael Compton’s mind was on surfing and relaxing. Stopping at various restaurants throughout the trip, however, something caught his attention: There was a widespread lack of healthy, fresh, great-tasting food. Once he returned to Miami, Compton was determined to change that.
