Lee will stay on as a consulting chef to The Forge as he pursues other opportunities, and will collaborate with Doyne on kitchen operations. (He also will be there for a big James Beard Foundation dinner at The Forge on Sept. 18.) The two chefs have worked together for more than eight years — she was part of the New York-based crew that came with Lee to Miami — mostly with Doyne as chef de cuisine and Lee as exec chef. This marks the first time that she is running the show.
“Chef Doyne is very talented, and we feel she is highly qualified for this position,” says Forge owner Shareef Malnik, whose family has operated the steakhouse and wine bar since 1969. He took a break from his wedding festivities in Montana, where he and actress Gabrielle Anwar recently wed, to comment on the kitchen change in Miami Beach.
“I am proud to see a woman head our steakhouse — a winning combination that marks a first for us,” Malnik says. “We are excited to embark on this journey together.”
