Exactly zero pork dishes are on chef Diego Oka‘s Peruvian menu at La Mar restaurant.
All the more reason it was a surprise — though not a shock — when he won the Miami Cochon 555 cooking event Sunday at the Ritz Carlton South Beach. The event, which hosted more than 300 people at $125 a ticket, showcased five top local chefs using every part of one of five heritage pigs.

Oka and his team from La Mar — which prepared six dishes — earned a spot in the June 18 national competition in Aspen, Grand Cochon, where he will vie for the title against regional winners from cities such as New York, Chicago and Los Angeles.
