Karen Muirhead wrote on a scrap piece of paper three goals she wanted to accomplish. One of them was owning her own bakery.
She recently found the decade-old rumpled note inside a book, days before opening Honeybee Doughnuts in South Miami.
“I had totally forgotten about that list,” Muirhead said. “It was definitely a moment in my life for me to see that because I wrote it over ten years ago. When I found the little piece of paper, I just couldn’t believe it. Especially the timing, it was perfect.”
Muirhead, who was in corporate banking for 12 years before opening her bakery, said she felt the time was right to make a career change. The bakery, which has been open for about three weeks, already has fans driving from all over Miami.
For June 3rd’s National Doughnut Day, the lines were out the door and even trickled down to the neighboring hair salon. Honeybee Doughnuts was also giving away free sprinkled and glazed doughnuts as part of the day’s celebration.
Muirhead credits her success to the quality ingredients she uses in her unique recipes. The fourth-generation Italian with Dominican roots said her shop tries to use the healthiest components and locally sourced whenever possible. Some of their doughnut flavors include guava, Oreo cookie, vegan chocolate and fun flavors such as matcha green tea. They also are working on new flavors, such as passion fruit and coffee. Their gluten-free doughnut is a top seller, too.
Jeannette Vidal of South Miami has been a fan since the first day. Last Friday, she made three trips to buy her favorite, a dulce de leche doughnut, which had sold out by the time she returned. So she prepaid to pick up her order the next day, and she jokes they should start a home delivery service..
“I’d be the first to sign up. These doughnuts are just so good,” Vidal said. “You only need to have one, and you’re in heaven.”
