Dena Marino and Marcus Wade met 20 years ago, when they were both line cooks at Michael Chiarello’s Tra Vigne in Napa Valley. They got married and moved to Aspen, where Wade jumped to the front of the house while Marino worked up to executive chef. Those are the roles they fill now at their MC Kitchen in Miami’s Design District.
Marino’s seasonally focused, modern Italian cooking is as elegant and thoughtful as it is comforting and hearty. And Wade’s no-nonsense, tattoos-and-heavy-rings appearance belies a true hospitality expert. He is a craft beer aficionado, curating Florida’s largest selection of Dogfish Head beers on draft, and his knowledge of wines and spirits is on display in MC’s robust wine list and exquisitely stocked bar.
