Why he’s in the Food 50: Michael Schwartz is meticulous about building an empire without sacrificing his commitment to quality food and service. South Florida held its collective breath as Schwartz, one of its most-celebrated chefs thanks to his award-winning cooking at Michael’s Genuine Food & Drink, expanded in scope from his Design District flagship into hotels and cruise ships and in concept from modern-American to white-tablecloth luxury and Neapolitan-style pizza. We worried his company’s meteoric rise was too much, too fast. We feared what would happen when it wasn’t Schwartz himself at his restaurants’ stoves anymore. And then we exhaled a sigh of relief the first time — and every time since — we ducked into Harry’s for a pie and craft beer, or celebrated a special occasion at The Cypress Room or sent visitors to be pampered at Restaurant Michael Schwartz at the Raleigh. Across the board at Genuine Hospitality Group restaurants, food is consistently excellent, and service is a noticeable notch above what you find elsewhere around town. Keep building that empire, Schwartz; you’re making everything about Miami’s food scene better.
