Why they’re in the Food 50: Jen Chaefsky and Mike Pirolo are the modern-day mom-and-pop behind Macchialina, a rustic Italian eatery that’s a favorite among locals and chefs. The Philadelphia-raised Chaefsky learned the hospitality biz working in Stephen Starr’s restaurants, while Queens-born Pirolo picked up a four-star Miami Herald review while chef de cuisine at Scott Conant’s Scarpetta at the Fontainebleau Miami Beach. Macchialina, open since 2012, is their first venture together. They’re opening a second Macchialina, in Asheville, North Carolina, this spring.
