Why he’s in the Food 50: Josh Gripper’s take on childhood comfort desserts is like a warm blanket on a cool night. Coming up through the demanding New York kitchens of Daniel Boulud and Andrew Carmellini, Gripper brought his envelope-pushing work ethic and nostalgia-inducing flavors to Carmellini’s The Dutch at the W Hotel in Miami Beach. He’s now in charge of all desserts at the hotel, and they include under-the-radar stunners like salted lime pie (it gives Key lime a run for its money) and homemade French toast ice cream.
