Why he’s in the Food 50: For the second year in a row, Daniel Toral is preparing to represent Miami in the semifinals next month of the national Top Somm competition organized by the U.S. Guild of Sommeliers. A rare-breed Advanced Sommelier, Toral knows wine like few others in South Florida. More importantly, the graduate of Florida International University’s hospitality-tourism management program knows how to make his guests happy. His Miami career includes curating some heavy-hitting wine programs, most recently at the Setai hotel and at Lippi. In the fall, 50 Eggs CEO John Kunkel brought Toral on board to work his magic on the group’s expanding portfolio of restaurants: Khong River House, Yardbird, Swine and the recently announced BTW and Lewellyn’s Chicken & Biscuits.
