Why they’re in the Food 50: Hospitality veterans Elad Zvi and Gabriel Orta flipped the switch on South Florida’s craft cocktail scene with their Bar Lab consulting firm. When The New York Times came to town in 2010 to report on Miami’s nascent mixology movement, there were Zvi and Orta in the lead, at the time serving their couture cocktails at Living Room at the W in Miami Beach. When New York-based hotel developer Sydell Group (NoMad, Ace) opened the upscale-cool hostel Freehand Miami in 2012 in the old Indian Creek Hotel, the suits tapped Zvi and Orta to run the Freehand’s food-and-beverage outlets: Broken Shaker and the new 27 Restaurant. And now, whenever a restaurant opens in Miami and wants a legit cocktail program, Zvi and Orta get the call to come in and consult.
