Why they’re in the Food 50: Cindy Hutson and Delius Shirley are entering their third decade of collaborating on restaurants (they opened Norma’s on the Beach in 1995), and they’ve never worked harder than they are right now. Hutson this month releases her first cookbook-memoir, From the Tip of My Tongue, and later this year the couple will open Zest and Zest Market in downtown Miami. Every week, they take turns puddle-jumping from their flagship Ortanique in Coral Gables to their restaurants in the Cayman Islands and Bahamas.
Hutson said it’s important to them and to their longtime customers in Coral Gables (Ortanique opened here in 2000) that one of them is always present, while it’s crucial to their product and brand that they also spend quality time at their island projects. An ambitious, 3,500-square-foot project, Zest and its adjoining grab-and-go market will be a focal point when they open in Miami’s Southeast Financial Center (200 S. Biscayne Blvd.), also home to Spris and The Cheese Course.
Family affair: Hutson’s daughter Ashley has distinguished herself since joining Ortanique as front-of-house manager: Her floor presence and hospitality know-how earned her a spot on Zagat Miami’s 30 Under 30 list in 2014.
