Cook's Corner Recipe: Mrs. Rex's Frozen Fruit Salad

MRS. REX'S FROZEN FRUIT SALAD

Anne Robin of Plantation sent this recipe in response to a reader's request for the salad her mother had made in the 1940s. Mrs. Rex, who lived in a Pennsylvania town called Little Washington, was the mother of Robin's college roommate. ``This wonderful cook only baked and cooked everything on a wood-burning stove. Her daughters gave her a beautiful gas stove -- but she never used it! This salad is rich and delicious. My husband says it's not a salad -- it's a dessert.''

• 3 ounces cream cheese, softened

• 2 tablespoons heavy cream

•  1/3 cup mayonnaise

• 2 tablespoons lemon juice

•  ¼ teaspoon salt

• 1 can (about 14.5 ounces) fruit cocktail

• 1 banana, peeled and sliced thin

•  ¼ cup maraschino cherries, halved

•  ¼ cup nuts, chopped fine

• 2 tablespoons sugar

• 1 cup heavy cream, whipped

Mix cream cheese thoroughly with the 2 tablespoons of cream. Add mayonnaise, lemon juice and salt. Drain fruit cocktail well. Mix all the fruit and nuts together. Add the sugar, then stir in the cheese mixture. Fold in whipped cream and pour into a loaf pan. (Originally, the recipe was made in a metal ice-cube tray.) It takes about 3 hours to freeze. Makes 8 servings.

Per serving: 314 calories (72 percent from fat), 25.9 g fat (11.2 g saturated, 7.2 g monounsaturated), 62.9 mg cholesterol, 2.7 g protein, 20.3 g carbohydrates, 1.5 g fiber, 172.4 mg sodium.
