WINE
Airing out the flavors
Chicago Tribune
Looking to make a big splash at your next party? Consider the spaceship-like Soiree, a globular glass aerator that lets your wine breathe while you're pouring.
Most Americans drink their wine young. Too young in some cases. You need to punch out the knots to let it relax, open up and smooth out. Aerating makes it seem silkier, livelier and more aromatic.
``An $8 bottle starts to taste like a $12 or $15 bottle,'' said Andrew Lazorchak, an architect who developed the Soiree aerator.
Traditional decanting means splashing the wine from bottle to container. Then you pour it into a glass. The Soiree and similar devices accomplish the same thing every time you pour a serving.
Soiree is available at winesoiree.com. The suggested retail price is $25 or $100 for a package of five.
