Recipe: Homemade Granola

BREAKFAST
HOMEMADE GRANOLA
This granola is better than any store-bought variety we've tried and is very easy to make. It's much cheaper than most breakfast cereals, especially if you buy the nuts and oats in bulk. (If you're really pinching pennies, omit the nuts.)
4 cups old-fashioned rolled oats
½ cup shredded or flaked coconut
1 cup nuts (any type), chopped
1 teaspoon cinnamon
½ cup vegetable oil
½ cup honey
½ teaspoon vanilla
1 cup raisins or chopped dried fruit
Heat oven to 350 degrees. Grease two large, rimmed baking sheets.
Mix oats, coconut, nuts and cinnamon in a big bowl. Separately, combine oil, honey and vanilla. Drizzle over dry ingredients and mix well.
Spread on prepared pans. Bake 15 to 20 minutes, until toasty, stirring occasionally. When cool, pour back into bowl and stir in raisins. Refrigerate, tightly covered. Makes about 7 (1-cup) servings.
