Recipe: Honey Mustard Chicken

HONEY MUSTARD CHICKEN

Chicken thighs are one of the cheapest cuts of poultry -- we've seen them on sale for less than $1 a pound. The only somewhat pricey ingredient in this recipe is honey, which may be in your pantry anyway. Serve with rice and a green vegetable or salad.

• 1 tablespoon butter or margarine

• 1 pound chicken thighs, skin removed and discarded

• 4 carrots, peeled and sliced

• 2 garlic cloves, peeled and minced

• 1 tablespoon mustard

•  ½ teaspoon dried thyme leaves

•  ½ teaspoon salt

•  1/8 teaspoon pepper

• 3 tablespoons honey

• 1 onion, peeled and chopped

Melt butter in heavy skillet over medium heat. Add chicken, skinned side down, and carrots. Cook 8 to 10 minutes, until chicken is browned.

Meanwhile, stir the garlic, mustard, thyme, salt and pepper into the honey. Turn chicken over. Add the onion and the honey mixture to pan. Cover and cook, stirring occasionally, about 25 minutes, until chicken is done. Makes 2 servings.
