Fork on the Road Recipe: Angel Hair Pasta With Mozzarella

MAIN DISH

ANGEL HAIR PASTA WITH MOZZARELLA

You can use fresh mozzarella or the type sold shredded in a bag. Chopped sun-dried tomatoes can also be added. Serve with bread and a tossed salad.

• 8 ounces angel hair pasta

• 3 tablespoons olive oil

• 1 medium tomato, diced

• 8 ounces mozzarella cheese

•  ½ cup pitted and sliced olives (any type)

Cook pasta according to package directions until al dente; drain. Return pasta to the pot. Add the olive oil and tomato. Cook over medium heat until hot, gently tossing with two forks. Add the mozzarella and olives and toss again. Makes 2 large servings or 4 small side dish servings.
