SIDE DISH
BLACK BEAN AND RICE SALAD
1 packet microwaveable brown rice
½ cup rinsed and drained canned black beans
1 cup chopped cilantro
4 tablespoons reduced-fat vinaigrette
Salt and freshly ground pepper
1 medium tomato, sliced
Heat rice according to package instructions. Measure out 1 cup rice and place in a bowl. (Save the rest for another meal.) Add beans, cilantro, dressing and salt and pepper to taste. Mix and fluff with a fork. Serve sliced tomato on the side. Makes 2 servings.
Per serving: 211 calories (14 percent from fat), 3.3 g fat (0.4 g saturated, 1.1 g monounsaturated), 2 mg cholesterol, 7.4 g protein, 39.2 g carbohydrates, 6.1 g fiber, 421 mg sodium.
